I became a vegetarian for four months and have gained eight pounds a since then. I know it's because of the pasta and fried foods that I have been eating and I eat them so often because most of the time im not sure what else to eat. I tried to search for recipes online, but tend to call things I can not find here. I also feel lost when I Shopping for beyond salad, pasta and eggplant Parmesan I do not know how to make any vegetarian "memory" so you do not know what buy together or why keep on hand.

I like the grill and saute vegetables, its super easy and fast! i normally use a large pan in the oven or George Forman grill. if I'm using the oven I use a small amount of vegetable oil add sliced Zuccini, squash, mushrooms, oinions, carrots, but you can add more, depending on what you like, then I just cook, stirring from time to time at the same time. you can add a little salt, pepper or other seasonings and serve with a side of rice, or serve with tortillas mmm. You can also bake okra or broccoli and top with bread crumbs just put a small amount oil in a pan, put as many vegetables as you want and sprinkle with breadcrumbs / salt / pep to taste and bake for 20-25 minutes. so delicious! that was my go to lunch after a hard day's work when the last thing I want to do is slave in the kitchen!
