How do you maintain a vegetarian diet, when her husband and children die hard meat eaters?

My husband and son both think the world will come to an end if we do not have meat every day. I just remove the poultry out of my diet, and have been pork and red meat free for a few months. I do plan on consumption fish from time to time (by the way I like fish), but certainly not every day. Is there a vegetarian meal can suggest? Or, does anyone know of a good vegetarian / pescatarian cookbook you can recommend?
