Does anyone have the cookbook Vegetarian Epicure 2?
I am looking for a recipe in the second Vegetarian Epicure cookbook that is for a cold Curried Rice Salad with Mandarin Oranges and grapes. Does anyone out there have the book? Please let me know ..... Thanks a million!
My family has The Vegetarian Epicure seconds and I'm sorry, there is no recipe for rice salad. Perhaps it was in another book you read Vegetarian / property, at the same time?

Finding and Creating Vegetarian Meal Plans
In our busy world, planning our meals ahead of time not only makes sense, it helps us stick to a budget. Additionally, for those who want to lose weight, meal plans offer a structure that makes the process simpler and more productive. Vegetarian meal plans abound, but finding one that is easy, nutritionally balanced, and manageable can take a bit of work.
Make it Easy; Vegetarian Eating Should be Simple
There is something very liberating about switching to a vegetarian diet. Your eating, by default, becomes much more tied to the natural cycle of the year. The best and healthiest choices are seasonal. Farmers markets become a regular hang out and healthy food stores your inspiration.
The Vegetarian Kitchen
To create a kitchen that is prepared to accommodate a vegetarian lifestyle, your first decision has to be what kind of vegetarian you wish to be. Some vegetarians eat eggs, dairy, and/or fish while others won't. Some people opt to eliminate all foods that source from any animal, including milk products and eggs.
The difference is important because eggs, for example, provide great protein and many nutrients, and for vegans – those who eat no animal products at all – protein sources can be bit more challenging.
Either way, you will want to stock up on a variety of beans, both canned and dried, grains, vegetables, fruits and nuts. These will be the basis of your diet and when combined properly, will provide you with all the nutrients your body needs to be healthy and lean.
The closer each food to its original state, for example raw not roasted nuts, the better it is for you nutritionally. Local produce is to be preferred over those items imported from other countries; the less a food travels the more nutrients it is likely to retain.
Where to Find Vegetarian Dishes
Once you have stocked your kitchen, the next question is where to find recipes that go beyond stir fry and salads. Fortunately, there are some very easy solutions. Your first is to obtain some vegetarian cookbooks. Without naming names, there are a number of such books that are considered the very basis of vegetarianism, and if you head to your local healthy food store you, are likely to find several. You can also find a good selection at most libraries.
The internet is another great resource. You can find hundreds of vegetarian websites that offer information, recipes, and support forums. For those who are just switching to a vegetarian lifestyle, this support can be invaluable. Additionally, you can find some great sites that offer complete vegetarian meal plans designed to help you achieve weight loss goals – if that is your objective.
Any vegetarian meal plan should strive to provide the eater with all their nutritional requirements not in one day, but rather over the course of a week. It is actually nearly impossible to obtain all your nutrients in one day no matter what kind of diet your follow, by the way. Balance and moderation in all things is the way to approach life, and your diet should be no different. Good eating!
