Gartenstein tells how she happened to get a job in a health food store when she was just out of college, and later started a catering business that included vegetarian food. When she saw how well her vegan dishes sold, she started her Seattle-based, all-vegan catering business. THE ACCIDENTAL VEGAN includes simple recipes for appetizer staples such as hummus, babaganoush, and eggrolls. Soups include miso-noodle, hot and sour, and borscht. Her main dishes include Pad Thai, various curries, and an outstanding Greek lasagna. (For dessert, try her baklava!) Gartenstein promotes the meat substitute seitan, which she prefers over tofu, and provides several familiar recipes, such as pepper steak, that can be made with meat replacements.
