I'm a vegetarian and celiac alos a student, am looking for recipe ideas that incorporate cheap Vits

I'ma pretty good cook and although I know that many recipes etc need a bit more variation, also subsitute gluten-free foods are very fattening so need something to replace that, apart oat cakes or rice cakes (very deficient in iron and protien - any thoughts would be great other than take supliments as I do! health!

I am a student too, and I really like the bread. These are some of my staples. Chickpeas and lentils are inexpensive and gluten free. They are also high in iron. Mjdarra is a food Basic Middle Eastern lentils 1 cup cold water ½ cup of uncooked long grain rice 1 large onion 1 teaspoon salt 1 tablespoon onion half teaspoon of seeds quarter teaspoon cumin allspice Cook the rice and lentils separately and drain. Fry the onion til caramelized onions and spices. Add salt. Mix all together, let sit for 5 minutes. Serve with pita bread, sliced cucumbers and yogurt. Lentil Soup 1 cup mushrooms, chopped 1 tbsp soy sauce 1 bouillon cube 1 onion medium chopped 2 cups dried lentils 1 teaspoon pepper oil (tastes better cayenne) Fry the onion and mushrooms brown onion 'til. Add the lentils, and add enough water to cover, plus the bouillon cube and pepper to taste. Boil til soft, stirring the onion and mushrooms. Stir in soy sauce. Let stand for 15 to 20 minutes to eat. Salad 1 can garbanzo beans, drained 1 cup large fresh tomatoes 1 small can whole kernel corn 1 chopped bell peppers (red / yellow) 1 tablespoon lemon or lime juice 1.5 tbsp veg oil 1 teaspoon chili powder 1 teaspoon cumin, ½ tsp cayenne pepper (pepper or otherwise) average tsp spices Combine garlic, citrus juice, olive oil in a dish and set aside. The taste - you may need more spices if yours are not super fresh. Mix the rest of the ingredients. Drizzle the dressing over the salad. Let stand for 20-30 minutes. Green Cantonese style (high iron) 1 tablespoon canola oil 4 cups washed leaves (spinach, Yu Choi, snow pea tips or mustard greens) 1 tablespoon minced garlic Heat a wok very hot and throw away the garlic. Fry til soft greens. Eat, adding a little soy sauce or oyster sauce on top of the season after cooking.

Soul food cooking techniques are also adapting to the slimmer, leaner consumer demand. Techniques not normally associated with southern cooking is joining this movement. For example, stir frying -  this quick cooking method that helps to preserve nutrients and vitamins is being used in more soul food recipes. You’ll also notice  more steaming, baking and roasting used and less deep fat frying.
