Spanish dishes that are vegetarian?

I have this project for school that I have to make a Spanish meal. It must be a main course without peanut products. And I'm a vegetarian too, so it would be nice. I can not think of anything or find though! Can you help me? It must be easy to do because I am getting a lot of people, and without food strange because I want people to eat! Thanks!

When ready to serve, transfer to a plate. Add a little water to beans and heat in cooking, stirring occasionally. If you allow everyone to make their own burritos, place each ingredient in your own bowl with a spoon on the table along with the plate of tortillas.
